Trim-The-Tree Chicken Pitas
- 1 cup sliced fresh mushrooms
- 1 medium onion, chopped (1/2 cup)
- 8 ounces torn fresh spinach (6 cups)
- 1 tablespoon water
- 2 (6 ounce) boneless grilled chicken breast strips
- 1 cup shredded mozzarella cheese (4 ounces)
- 14 cup grated parmesan cheese
- 14 cup bottled caesar salad dressing
- 4 pita bread rounds, split
- Coat a large skillet with nonstick spray.
- Add mushrooms and onion.
- Cook over medium heat 5 minutes.
- Remove from heat.
- Add spinach and the 1 tablespoon water to skillet.
- Cover; cook 1 minute until spinach just wilts.
- Stir in the cooked chicken and heat through.
- Add cheeses and salad dressing; toss.
- Serve with pitas.
