California Sushi
- 5 c. uncooked rice, washed and cooked
- 2/3 c. vinegar
- 2/3 c. sugar
- 3 tsp. salt
- 2 tsp. ajinomoto
- avocado
- watercress
- kamaboko
- radish sprouts
- prepared horseradish
- cucumber
- takuan
- crab sticks
- Bring to a boil and cool the vinegar, sugar, salt and ajinomoto.
- Mix into rice.
- Cut 20 sheets of yaki (roasted) nori in half.
- Cut vegetables into 1/4 x 2-inch strips.
- Arrange vegetables on a platter with a small dish of prepared horseradish to sparingly spread over rice as people roll their own sushi.
- To make a sushi, a person would take a nori sheet, place a thin layer of sushi rice over the nori; place some horseradish over rice and place any combination of vegetables in the center.
- Roll nori into a cone shape or into a jellyroll shape before eating.
