Almond And Orange Salad
- 1 c. slivered almonds
- 4 qt. salad greens (romaine, iceberg or red leaf)
- 4 Tbsp. chopped parsley
- 1/2 c. salad oil
- 2 Tbsp. sugar
- 3 (11 oz.) cans mandarin oranges, drained and chilled
- salt and pepper
- 2 c. thinly sliced celery
- 4 green onions, chopped
- 4 Tbsp. white wine vinegar
- 1/4 tsp. liquid hot pepper seasoning
- Toast almonds in 350u0b0 oven approximately 8 minutes until golden brown.
- In bowl, combine greens, celery, parsley and onion. Cover and chill 2 to 4 hours.
- In jar, combine oil, vinegar, sugar and hot pepper seasoning.
- Shake well; just before serving, toss greens with dressing.
- Distribute oranges and almonds over top.
- Serve at once.
- Serves 10 to 12.
