Orange Artichokes (Turkish Homemade Cooking)
- 350 grams Jerusalem artichoke
- 1 Onion
- 1 Potatoes
- 1 Carrot
- 2 tbsp Rice (washed)
- 1 tsp Sugar
- 1/2 tsp Salt
- 1/2 Orange (squeezed)
- 1/2 Lemon (squeezed)
- 30 ml Olive oil
- 600 ml Water
- 1 Dill (optional)
- 1 tbsp Olive oil (for stir frying)
- Thinly slice the onion.
- Peel the skin from the other vegetables and cut into 1.5 cm bite-sized cubes.
- Heat oil in the pot and cook the onion until tender.
- Add the remaining vegetables and lightly stir-fry.
- Add the ingredients.
- Cover with a lid and simmer until the vegetables are tender (about 30 minutes).
- Arrange on a dish and garnish with chopped dill to finish.
- In Turkey, this is typically served chilled, but since artichokes are in season in the winter, I like to eat it warm.
