Phyllis Boudreaux's Stay-Slim Burritos

  1. Preheat oven to 375F.
  2. Mist a 9 x 13 baking dish with low-cal cooking spray.
  3. In a nonstick skillet over medium heat, cook ground turkey, breaking it into crumbles.
  4. Add onion, celery and garlic, and cook until onions are translucent.
  5. Add chili powder, mustard seeds and pepper.
  6. Let this simmer while preparing the next step.
  7. Drain the black beans; blend them in a food processor until creamy.
  8. Wrap tortillas in a damp towel and warm them in the microwave for 30 seconds.
  9. Place a spoonful of turkey mixture in the center of each tortilla (use half of the mixture).
  10. Top each one with a spoonful of black beans (use all) and sprinkle with 2 Tbsp.
  11. shredded cheese (use half the package).
  12. Fold tortillas around the ingredients burrito-style and place in baking dish, seam side down.
  13. Bake burritos for 30 minutes.
  14. While they cook, add the jar of salsa to the pan with the remaining turkey mix and stir over low heat.
  15. Remove burritos from the oven, top with the salsa-turkey mixture and sprinkle with the remaining cheese.
  16. Return them to the oven and bake until cheese is melted.
  17. Serve hot!
