Phyllis Boudreaux's Stay-Slim Burritos
- 1 lb. lean ground turkey breast
- 1 medium yellow onion
- 2 stalk celery
- 3 clove garlic
- 2 tbsp. chili powder
- 1 tbsp. mustard seeds
- 1 tsp. Black pepper
- 1 can black beans
- 8 whole wheat tortillas
- 1 package shredded low-fat Mexican blend cheese, 2 cups
- 1 jar salsa
- Preheat oven to 375F.
- Mist a 9 x 13 baking dish with low-cal cooking spray.
- In a nonstick skillet over medium heat, cook ground turkey, breaking it into crumbles.
- Add onion, celery and garlic, and cook until onions are translucent.
- Add chili powder, mustard seeds and pepper.
- Let this simmer while preparing the next step.
- Drain the black beans; blend them in a food processor until creamy.
- Wrap tortillas in a damp towel and warm them in the microwave for 30 seconds.
- Place a spoonful of turkey mixture in the center of each tortilla (use half of the mixture).
- Top each one with a spoonful of black beans (use all) and sprinkle with 2 Tbsp.
- shredded cheese (use half the package).
- Fold tortillas around the ingredients burrito-style and place in baking dish, seam side down.
- Bake burritos for 30 minutes.
- While they cook, add the jar of salsa to the pan with the remaining turkey mix and stir over low heat.
- Remove burritos from the oven, top with the salsa-turkey mixture and sprinkle with the remaining cheese.
- Return them to the oven and bake until cheese is melted.
- Serve hot!
