Spinach-Cheese Rounds
- 1 pkg. puff pastry sheets
- 1 egg, beaten
- 1 Tbsp. water
- 1/2 cup shredded Pepper Jack cheese
- 1/4 grated Parmesan cheese
- 1 green onion, chopped (about 2 Tbsp.)
- 2 tsp. chopped fresh parsley
- 1 tsp. garlic powder
- 10 oz. package frozen, chopped spinach, thawed and well drained
- Thaw pastry at room temperature 30 minutes.
- Pre-heat oven to 350u0b0F.
- Mix egg and water and set aside.
- Mix Pepper Jack, Parmesan, onion, parsley, and garlic powder and set aside.
- Unfold pastry on lightly floured surface.
- Brush with egg mixture.
- Top with cheese mixture and spinach.
- Starting at one side, roll up like a jelly roll.
- Cut into 20 (1/2-inch) slices.
- Place 2-inches apart on baking sheet.
- Brush with egg mixture.
- Bake 15 minutes or until golden.
- Makes 20 appetizers.
