Chocolate Eclair Dessert Recipe
- 1 box graham crackers
- 2 Packages instant French vanilla pudding
- 3 c. cool lowfat milk
- 8 ounce. or possibly 12 ounce. container Cold Whip
- Set out a 13x9 inch pan.
- Mix pudding and lowfat milk, beat with mixer till thick.
- Mix in Cold Whip.
- Layer graham crackers in bottom of pan, then layer of pudding mix, then another of crackers, then another of pudding, then another of crackers.
- Spread chocolate topping over last layer of graham crackers.
- Cover with waxed paper and chill overnight.
- Chocolate Topping: Mix and heat in pan on low (or possibly microwave) till chocolate is melted.
- Add in 1 1/2 - 2 c. of powdered sugar.
- Mix well.
