Nell'S Banana Nut Cake
- 1/2 c. margarine, melted
- 1 1/4 c. sugar
- 2 eggs, beaten
- 1 c. pecans, toasted
- 2 c. flour
- 1 tsp. soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. mashed ripe bananas
- 1 tsp. vanilla flavoring
- Toast pecans in 350u0b0 oven about 5 minutes.
- Beat eggs until light.
- Slowly add sugar.
- Beat in margarine and vanilla.
- Blend together dry ingredients and add alternately with bananas, beating after each addition.
- Mix in 3/4 cup pecans that have been chopped.
- Retain about 1/4 cup larger pieces for top of cake. Grease and flour 2 (9-inch) cake pans.
- Pour mixture into pans and bake for 25 to 30 minutes at 350u0b0.
- Frost layers with vanilla, powdered sugar frosting.
- Arrange 1/4 cup pecans on top of cake.
