Chicken pie
- 1 shortcrust pastry
- 3 chicken breasts / skinned and boneless thighs
- 1 knob butter
- 1 tbsp plain flour
- 1 splash white wine optional
- 1 half pint milk
- 1 chopped chestnut mushrooms
- 1 handful smoked bacon lardons
- 1 chopped onions
- 1 fresh / dryed thyme
- 1 salt and pepper seasoning
- 1 boiled diced potatos
- In a saucepan, melt butter, add chopped onions and bacon lardons,chicken, seasoning, fry for 2 minutes
- Add wine, mushrooms and simmer for 3-4 minutes.
- Add sieved flour, stirring, add in milk gradually stirring.
- Add thyme.
- Simmer for 20 minutes or untill chicken tender.
- Add pre-boiled potatos.
- Pour mixture into pie dish and top with pastry.
- Remember to slit the top to release air.
- Brush with milk to glaze top.
- Bake in oven untill pastry done.
