Ruby Elliott'S Zucchini Casserole - California

  1. Into 2-quart saucepan with water to cover, add zucchini, onion, garlic and bell pepper.
  2. Cook until tender and drain well. May be microwaved.
  3. Into a large bowl, mix eggs, bread, pepper, salt, oil, milk, 1/2 cup cheese and sausage, then add zucchini mixture.
  4. Spray a 6 x 9-inch pan with Pam; pour mixture into pan and cover with remaining cheese.
  5. Bake at 350u0b0 for 30 to 45 minutes or until dry.
