Ruby Elliott'S Zucchini Casserole - California
- 2 c. shredded zucchini
- 1 large onion, chopped
- 1 clove garlic or 1 1/2 tsp. garlic salt
- 1/2 bell pepper, chopped (optional)
- 3 eggs, lightly beaten
- 2 c. crumbled bread
- 1/2 tsp. pepper
- 1 tsp. salt (unless garlic salt is used)
- 1 Tbsp. oil
- 1/2 c. milk
- 2 1/2 c. medium sharp cheese, grated
- 1/2 lb. sausage, browned or sausage links
- Into 2-quart saucepan with water to cover, add zucchini, onion, garlic and bell pepper.
- Cook until tender and drain well. May be microwaved.
- Into a large bowl, mix eggs, bread, pepper, salt, oil, milk, 1/2 cup cheese and sausage, then add zucchini mixture.
- Spray a 6 x 9-inch pan with Pam; pour mixture into pan and cover with remaining cheese.
- Bake at 350u0b0 for 30 to 45 minutes or until dry.
