Pork Chops With BBQ Onions
- 4 boneless thick-cut pork chops
- 1 large onion, thinly sliced
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 tablespoon olive oil
- 12 cup barbecue sauce
- 1 tablespoon chipotle chile in adobo, diced
- 14 cup chicken stock
- 1 tablespoon Worcestershire sauce
- Season pork chops with salt and pepper.
- Brown in a skillet with olive oil over MEDIUM heat until cooked through (about 6 minutes per side, depending on thickness of the pork chops).
- Medium heat will ensure the outside gets brown and crusty while the center cooks thoroughly.
- Remove pork chops to a separate plate, and add onions.
- Cook over medium heat until onions are caramelized (about 10-15 minutes), stirring frequently.
- Add remaining ingredients and stir to combine.
- Let the sauce thicken over medium-low heat for about 5-10 minutes.
- Return the pork chops to the sauce just to heat through, and serve.
