Crispy Peanut Butter Cookies
- 1-1/2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup (1/2 stick) margarine
- 1/2 cup creamy peanut butter
- 1 cup sugar
- 1 egg
- 2 Tbsp. milk
- 1 tsp. vanilla
- 2 cups sweetened puffed wheat cereal
- Heat oven to 350F.
- Mix flour, baking soda and salt; set aside.
- Beat margarine with peanut butter until smooth.
- Gradually beat in sugar; continue beating until light and fluffy.
- Beat in egg.
- Add flour mixture alternately with milk, mixing thoroughly after each addition.
- Add vanilla.
- Using 1 teaspoon of dough for each, shape into balls, then flatten with glass.
- Press cereal on top of dough.
- Place about 2 inches apart on cookie sheets which have been sprayed with no stick cooking spray.
- Bake 10 to 12 minutes or until lightly browned.
- Remove and cool on wire racks.
