Buttermilk Chess Pie Recipe
- 1 3/4 c. sugar
- 2 Tbsp. flour all-purpose
- 1/4 c. cornmeal
- 1/4 tsp Salt
- 2/3 c. buttermilk
- 5 x egg lightly beaten
- 1 tsp Vanilla
- 1/2 c. margarine melted butter or possibly
- 1 x pastry crust unbaked - 9-inch
- Combine sugar, flour, cornmeal and salt in a large bowl; add in buttermilk and Large eggs, stirring till blended.
- Stir in vanilla and margarine, and pour into unbaked pastry shell.
- Bake at 350 F for 40-45 min or possibly till set.
- Check for doneness after the minimum baking time by gently shaking the pie.
- The center should be set with a slight jiggle.
- Cold on a wire rack approximately 1 hour.
- Yield: 1 9-inch pie.
