Buttermilk Chess Pie Recipe

  1. Combine sugar, flour, cornmeal and salt in a large bowl; add in buttermilk and Large eggs, stirring till blended.
  2. Stir in vanilla and margarine, and pour into unbaked pastry shell.
  3. Bake at 350 F for 40-45 min or possibly till set.
  4. Check for doneness after the minimum baking time by gently shaking the pie.
  5. The center should be set with a slight jiggle.
  6. Cold on a wire rack approximately 1 hour.
  7. Yield: 1 9-inch pie.
