Fudgy Chocolate Cake(Yield: 10 Servings)
- 1 c. sifted cake flour
- 1/2 c. unsweetened cocoa powder
- 1 tsp. baking powder
- 2 eggs
- 1 egg white
- 1/2 c. sugar
- 1/4 c. margarine, melted
- 1/2 c. plus 3 Tbsp. strawberry preserves, divided
- 1 tsp. vanilla extract
- 3/4 c. halved fresh strawberries
- Combine first 3 ingredients in a bowl.
- Set aside.
- Beat eggs and egg white in a large bowl at medium speed of an electric mixer until foamy.
- Gradually add sugar, 1 tablespoon at a time, beating until thick and pale (about 5 minutes).
- With mixer running, slowly add melted margarine.
- Add 1/2 cup preserves, beating just until mixture is smooth.
- Stir in vanilla.
- Sift flour mixture over egg mixture; fold in gently.
