Fudgy Chocolate Cake(Yield: 10 Servings)

  1. Combine first 3 ingredients in a bowl.
  2. Set aside.
  3. Beat eggs and egg white in a large bowl at medium speed of an electric mixer until foamy.
  4. Gradually add sugar, 1 tablespoon at a time, beating until thick and pale (about 5 minutes).
  5. With mixer running, slowly add melted margarine.
  6. Add 1/2 cup preserves, beating just until mixture is smooth.
  7. Stir in vanilla.
  8. Sift flour mixture over egg mixture; fold in gently.
