Sweet & Spicy Onion Pizza

  1. Prepare cha-cha chicken per the recipe in my recipes.
  2. If using a bread machine, add crust ingredients to the machine in the order listed.
  3. Run on dough setting.
  4. If not using a machine, mix ingredients by hand and knead for 15 minutes.
  5. Let rise for 90 minutes.
  6. Thinly slice white onion.
  7. In a saucepan over low heat, add bacon fat, sliced onions, salt, black pepper, and red pepper.
  8. Cover and cook for 30 minutes until onion are softened and translucent.
  9. Place a baking sheet in oven and preheat to 500F.
  10. Punch down dough and dust a flat surface with cornmeal.
  11. Stretch dough out on surface until desired size/thickness is reached.
  12. Should be able to make at least a 12" pizza.
  13. To stretched dough, spread honey mustard dressing evenly on top.
  14. Add provolone slices, cha-cha chicken, and softened onions in that order.
  15. Dampen outer edge of the crust with water and sprinkle with salt.
  16. Transfer pizza to heated baking sheet and place in oven.
  17. Bake for 10-15 minutes, or until cheese is bubbly and bottom of crust is crispy.
  18. Slice into 8 slices and enjoy.
