Pulpo Salad.... (Italian Octopus Salad)
- 1 large Octopus
- 2 celery stalks
- 4 clove garlic
- 2 tbsp extra virgin olive oil
- 1/4 tsp sea salt
- 1 pinch crushed red pepper flake
- 2 lemons
- Put octopus in pot of boiling water for 20 minutes...shut off flame & let sit in pot for 20 minutes ...then remove from pot.
- cut off legs as close to body as possible
- rub off as much skin as possible with hand & rinse under water
- cut legs into half inch pieces & put into bowl
- chop up celery & mince garlic & put all ingedients into the bowl
- sqeeze the juice of the 2 lemons in ...mix well & serve!!
