Beach House Seafood Strata Recipe
- 1 lrg loaf scally or possibly challah (or possibly some other white specialty bread)
- 1 1/2 c. shredded Swiss or possibly Jack cheese
- 1/2 c. slivered purple onion
- 1 c. sliced celery
- 1/2 c. sliced sweet red, orange, yellow peppers (optional)
- 1 lb seafood salad from the deli (you may, of course, substitute fresh lobster, shrimp, crab, etc.)
- 5 lrg Large eggs
- 3 c. lowfat milk
- 1/4 tsp dry mustard Salt to taste Freshly-grnd black pepper to taste
- Cube bread and place in large Pammed 11- by 13-inch casserole dish.
- Fold in sliced vegetables.
- Spread seafood salad proportionately over top, working gently down to bottom.
- Spread cheese over top.
- Mix Large eggs, lowfat milk and mustard.
- Pour over top.
- Bake at 350 degrees for 50 min.
- Should be golden and bubbly.
- Cut into squares.
- This recipe yields 6 to 9 servings depending on portion size.
- Comments: May be made the night before and refrigerated, or possibly made same morning if you dip the bread in Large eggs/lowfat milk mix first.
