Roasted Lemon Garlic Fish Fillets
- 1 teaspoon olive oil
- 2 (5 ounce) fish fillets
- 1 small lemon
- 1 garlic clove (crushed)
- 18 teaspoon ground red pepper
- 14 cup fresh parsley
- Preheat oven to 450 degrees Fahrenheit
- Lightly coat baking dish with olive oil.
- Place 2 fillets in dish (with skin side down).
- Sprinkle with juice of lemon, 1 clove garlic, and ground red pepper.
- Roast 10 minutes per inch of thickness.
- Sprinkle with 1/4 cup chopped fresh parsley.
