Bourbon, Peach and Ginger Jam

  1. In a saucepan over medium heat, combine the peaches, sugar and ginger.
  2. Cook for 10 minutes, stirring every couple minutes.
  3. Pour in the bourbon, lemon juice and zest.
  4. Simmer until thickened, about 20 minutes.
  5. Stir every couple minutes to prevent scorching.
  6. Stir in the salt.
  7. Store refrigerated for up to 1 month.
