Lemon Bars
- 3 cups graham crackers, crushed
- 2 packages lemon Jell-O gelatin
- 1 lemons (juiced and rind) or 2 tablespoons real lemon concentrate (omit rind)
- 34 cup sugar
- 2 cups hot water
- ice cube, to equal 1 cup
- 1 can evaporated milk
- Put evaporated milk and beaters into freezer ahead of time.
- You want this to be well chilled.
- Add hot water to sugar and jello.
- Stir until dissolved.
- Add ice cubes.
- Stir until dissolved.
- Put mixture into fridge and let thicken.
- Take beaters and milk out of fridge.
- Beat milk until thick.
- Add lemon juice and rind.
- Slowly add thickend jello mixture to milk mixture and continue beating.
- Pour this mixture intoa 9x12 pan lined with the graham cracker crumbs.
- Sprinkle some of the crumbs on top of the bars.
- Refrigerate for at least 3 hours.
- Make sure the bars are well chilled!
