Cajun Stewed Tomatoes Recipe
- 4 lrg tomatoes
- 2 stalk celery minced very fine
- 1/4 x bell pepper minced very fine
- 1 tsp accent
- 4 Tbsp. sugar salt and pepper to taste
- 2 c. water
- Peel the tomatoes by soaking them in boiling water for one minute.
- Gently pull away the skin.
- Place tomatoes in a large pot and add in the remaining ingredients.
- Cover and boil gently for 15 min, till tomatoes are tender.
- Serve with croutons.
