Walnut Scotchies
- 1 12 cups coarsely chopped walnuts
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 14 teaspoon salt
- 12 cup butter, softened
- 34 cup sugar
- 12 cup firmly packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips

- Preheat oven to 350.
- Place walnuts in a single layer in a shallow pan; bake for 6-8 minutes until toasted and fragrant; cool.
- Process 1/2 cup toasted walnuts in a food processor until finely ground; place in a medium bowl.
- Add flour, baking soda, and salt to ground nuts, stir well with a whisk.
- Beat butter at medium speed with an electric mixer until creamy.
- Gradually add sugars, beating until light and fluffy.
- Beat in eggs and vanilla.
- Gradually add in flour mixture, beating on low speed until blended after each addition.
- Stir in butterscotch chips and remaining 1 cup toasted walnuts.
- Drop dough by level 1/4 cupfuls onto parchment paper-lined baking sheets (do not flatten).
- Bake at 350 for 16 minutes or until edges are lightly browned.
- Cool on baking sheets 5 minutes; remove to wire racks, and cool completely.
