Oriental Fried Rice
- 2 Tbsp. peanut oil
- 3 to 4 eggs, lightly beaten
- 1/4 c. peanut oil
- 3 to 4 c. steamed short grain rice
- 4 to 6 green onions, sliced
- 1 tsp. grated fresh ginger
- 1 to 1 1/4 c. leftover baked ham, cubed
- fresh pea pods (optional)
- 1/4 c. or less soy sauce
- Heat 2 tablespoons peanut oil in wok on high.
- Lightly beat eggs and slowly pour into hot oil.
- Swirl the wok until egg sets. Remove from wok and put on cutting board.
- Put 1/4 cup peanut oil in wok and heat to high.
- Add cooked rice and stir-fry until heated through.
- Add onions, ham, ginger and pea pods.
- Slice the cooked eggs after slicing them into 3-inch long strips and add to rice mixture.
- Add soy sauce a small amount at a time to desired taste.
