Vickys No Fuss Lentil Curry

  1. This curry is nice served with flat breads.
  2. Use shop bought or make homemade from my recipe
  3. Heat the oil in a saucepan and fry off the onions and garlic gently until softened
  4. Stir in the turmeric, cumin, curry powder and cardamom pods.
  5. Cook a further 2 minutes
  6. Stir in the tomato puree, stock and lentils
  7. Simmer for 5 minutes
  8. Warm the flat breads while you stir the coconut milk into the curry
  9. Remove the cardamom pods before serving
