Mexican Casserole
- 1 lb. ground beef
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- Doritos
- 1/2 can Ro-Tel tomatoes
- 1 large bottle Italian Wish-Bone dressing
- 2 to 3 lb. cubed sirloin steak, cubed into 2 to 3-inch sections
- approximately 6 bell peppers, cut into 1-inch sections or squares
- approximately 4 onions, quarter, then loosen up the sections
- approximately 6 tomatoes, quartered
- 2 pkg. fresh whole mushrooms
- 2 to 3 c. cooked rice
- Overnight, if possible, or at least 4 hours before grilling, mix in largest bowl you have the salad dressing, cubed meat and cut up vegetables.
- (Dad even threw in a drained can of whole potatoes.)
- Stir occasionally to get all pieces covered with the dressing.
