Easy Chocolate Pie
- 1 c. sugar
- 3 Tbsp. cornstarch
- dash of salt
- 2 c. milk
- 3 eggs, separated
- 1 oz. sq. unsweetened chocolate or 3 heaping Tbsp. cocoa
- 1 Tbsp. butter or margarine
- 1 tsp. vanilla extract
- 1 baked 9-inch pastry shell
- 1/2 tsp. cream of tartar
- 1/4 c. plus 2 Tbsp. sugar
- Combine 1 cup sugar, cornstarch and salt in a heavy saucepan. Mix well.
- Combine milk and egg yolks; beat with a wire whisk 1 to 2 minutes or until frothy.
- Gradually stir into sugar mixture, mixing well.
- Place over medium heat and stir constantly until thickened and bubbly.
- Remove from heat.
- Add chocolate, butter and vanilla extract, stirring until chocolate and butter melts. Spoon into pastry shell; set aside.
