Albondigas (Meatballs) Recipe
- 1 kg Lean chopped beef
- 2 x Large eggs
- 2 Tbsp. Fresh breadcrumbs
- 3 x Cloves garlic, peeled and Crushed
- 1 Tbsp. Minced fresh parsley
- 500 gm Spanish onions, peeled and Minced Salt Freshy grnd black pepper
- 1 Tbsp. Plain flour
- 3 Tbsp. Extra virgin olive oil
- 2 sm tomatoes, skinned, De-seeded and minced
- 1 sm glass dry white wine
- 150 ml Chicken stock
- Mix the meat, Large eggs, breadcrumbs, garlic, parsley and half the onions, and season with a little salt and pepper.
- Form into small balls and dust with flour.
- Heat the oil in a flameproof casserole and saute/fry the meatballs till well browned on all sides.
- Add in the remaining onion to the pan and cook till soft.
- Add in the tomatoes, wine and stock.
- Season to taste with salt and freshly groudn black pepper.
- Cover and simmer for 45 min.
