Kyoho Grape Compote
- 1 large bunch Kyoho grapes (or your choice of grapes)
- 400 ml Red wine
- 100 grams Sugar (granulated)
- 2 tbsp Lemon juice
- Peel the kyoho grapes.
- Don't peel from the end with the stems, but smoothly peel back from the bottom for a neat result.
- Place the ingredients into a pot.
- Stir and turn the heat to high.
- Bring to a boil.
- Boil for 1 minute to cook off the alcohol.
- Add all of the grapes from Step 1.
- Let it come to a boil again and then cook for 1 minute on high heat.
- Immediately remove from the heat.
- Pour into an air-tight sterilized storage jar while still hot.
- Once cooled, let it sit in the refrigerator overnight or longer.
- After sitting overnight, the flavor will have blended in and the grapes will have a beautiful color.
- Since the alcohol is cooked off, even someone who doesn't drink alcohol can enjoy this.
- It's up to you, but I recommend using 65 g of sugar if you will be eating it as is.
- If you will be using this for sweets or drinking the juice as a cider, then I recommend using 100 g of sugar.
