Shrimp Casserole
- 1 box Uncle Ben's long grain wild rice
- 1 can mushroom soup
- 2 Tbsp. green pepper, chopped
- 1 medium onion, chopped
- 2 Tbsp. butter
- 1 small jar mushrooms (if fresh mushrooms are used, saute with butter, onion, white wine, salt and pepper)
- 1/2 tsp. Worcestershire sauce
- 1 Tbsp. lemon juice
- 1/2 tsp. mustard
- 1 dash of pepper (fresh)
- 1/2 to 1 lb. fresh uncooked shrimp
- 1/2 to 3/4 c. cubed sharp Cheddar cheese
- Cook rice according to directions on box.
- Add soup, green pepper, Worcestershire sauce, lemon, mustard and cheese.
- Add canned or sauteed mushrooms.
- Mix together.
- Add shrimp and cook for 20 to 30 minutes at 350u0b0.
- Serves 4 to 6 people.
