Pork Tenderloin with Onion Relish

  1. Pork Tenderloin: Combine all ingredients except tenderloins.
  2. Rub 2-1/2 Tbsp.
  3. of the seasoning mixture evenly onto outside of each tenderloin.
  4. Place on half sheet pans; let stand 5 min.
  5. Bake in 375F-standard oven 30 to 35 min.
  6. or until cooked through (160F).
  7. Onion Relish: Meanwhile, saute onions in hot oil in large saucepan (or small saucepan for trial recipe) on medium heat 10 min.
  8. or until tender.
  9. Add remaining ingredients; stir.
  10. Bring to boil.
  11. Reduce heat to medium-low; simmer 5 min.
  12. or until slightly thickened, stirring occasionally.
  13. Remove from heat.
  14. Cover to keep warm.
  15. Remove tenderloins to cutting board; let stand 5 min.
  16. Cut into 1/4-inch-thick slices.
  17. For each serving: Plate 4 oz.
  18. sliced tenderloin on each serving plate; top with 3 Tbsp.
  19. of the warm relish.
