Apricot Cake
- 4 eggs
- 4 tablespoons flour
- 4 tablespoons sugar
- 4 tablespoons oil
- vanilla sugar
- salt, one pinch
- Beat the eggwhites and add gradually the sugar.
- In another bowl, mix the yolks, oil, vanilla and salt.
- Incorporate the yolks mixture into the eggwhites spoon by spoon than add the flour.
- Do not overmix.
- Composition should be fluffy.
- Pour into a greased and floured baking tin.
- Add the washed and sliced apricots.
- Bake at moderate heat for 30 minutes.
