French fries

  1. Heat oil in a deep fryer to 325F.
  2. wash and peel potatoes and cut into batons.
  3. deep fry for 4 minutes at 325F
  4. Drain and cool.
  5. Raise the fryer temperature to 375F.
  6. Return cooled potatoes to the deep fryer.
  7. Cook until golden brown.
  8. Remove from oil and drain.
  9. Toss with salt.
