Coconut Orange Cake
- 3/4 c. shortening
- 1 1/2 c. sugar
- 3 eggs
- 2 1/4 c. sifted cake flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1 tsp. vanilla extract
- Snow Peak Frosting
- 2 c. grated coconut
- Beat shortening at medium speed with an electric mixer until soft and creamy.
- Gradually add sugar and beat well.
- Add eggs one at a time, beating just until yellow disappears.
- Combine flour, baking powder and salt.
- Add to creamed mixture alternately with milk beginning and ending with flour mixture.
- Mix after each addition.
- Stir in vanilla.
- Pour batter into greased and floured 2 (9-inch) pans.
- Bake at 350u0b0 for 18 to 20 minutes or until toothpick inserted in center comes out clean.
- Cool completely on wire rack.
- Split cake layers in half to make 4 layers.
- Spread Custard Filling between layers.
- Spread top and sides with Snow Peak Frosting and with coconut.
