Creamy Spinach Parmesan Soup Recipe
- 1 (10 ounce.) pkg. frzn minced spinach
- 2 tbsp. butter
- 1 sm. onion, finely minced
- 2 c. Half and Half
- 2 tbsp. flour
- 1/4 teaspoon thyme
- 1/2 teaspoon celery salt or possibly salt
- 1/8 teaspoon nutmeg
- 1 c. chicken broth
- 1/4 c. Parmesan cheese
- Croutons
- Cook spinach and onion in butter.
- Add in chicken broth.
- Puree in blender or possibly food processor.
- Add in Half and Half, flour, thyme, salt and nutmeg.
- Heat on medium heat about 20 min.
- Sprinkle with Parmesan cheese, stir.
- Heat thoroughly, about 5 min.
- Serve with croutons.
- Serves 4.
