Strawberry Pineapple Mold
- 1 pkg. strawberry Jell-O
- 1 1/2 c. syrup (from pineapple)
- 2 Tbsp. lemon juice
- 3/4 c. strawberries
- 1 Tbsp. sugar
- 1 (No 2 1/2) can pineapple chunks
- 1 pkg. lemon Jell-O
- 3/4 c. boiling water
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1 c. cottage cheese
- 1/2 c. whipping cream
- 1/3 c. walnuts
- Dissolve strawberry Jell-O in pineapple syrup.
- Add water to make 1 1/2 cups.
- Stir in lemon juice.
- Chill until thick.
- Halve berries and 1 cup pineapple chunks to mixture, then chill until firm.
- Dissolve lemon Jell-O in water.
- Add lemon juice and salt. Cool and blend in sieved cottage cheese.
- Whip cream and fold in with walnuts.
- Put on top of layer.
- Fill center with berries and rest of pineapple chunks.
