Pasta Club Salad
- 1 lb boneless skinless chicken breast
- 1 (8 ounce) package bacon
- 1 (24 ounce) package wagon wheel macaroni
- 1 cup mayonnaise
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon juice
- salt & pepper
- lettuce (optional)
- tomatoes (optional)
- swiss cheese (optional)
- Cook chicken and set aside.
- Cook bacon to a crisp, let cool then crumble.
- Boil pasta, drain and rinse in cold water.
- mix mayonnaise, vinegar& lemon juice.
- Stir into pasta.
- Add chicken& bacon.
- Refrigerate at least 2 hours for flavors to mix.
- Serve over lettuce and tomato.
- Top with shredded swiss cheese, salt& pepper to taste.
