Crab or Tuna Melt Casserole
- 8 slices whole wheat bread, toasted and crusts removed
- 12 cup mayonnaise
- 14 cup minced red onion
- 14 cup chopped fresh parsley
- 12 granny smith apple, peeled, cored, and finely diced
- Tabasco sauce (a few drops or to taste)
- salt
- pepper
- 1 lb lump crabmeat (or three 6 oz. cans water-packed tuna, drained)
- 1 12 cups shredded gruyere cheese
- Preheat oven to 400; butter a shallow 13 x 9 inch baking dish.
- Line the bottom of the baking dish with the whole wheat toast.
- In a small bowl, combine the mayo, onion, parsley, and apple; taste and add Tabasco, salt, and pepper to taste.
- Blend in crabmeat or tuna; spread over the bread; top with the cheese.
- Bake for 15-20 minutes or until heated through and cheese is melted.
- Cut into squares to serve.
