Chitlins a La California

  1. Soak chitterlings in warm salt water 30 minutes.
  2. Cut each into 12-inch pieces.
  3. Slit open.
  4. Remove all fat particles and debris.
  5. Wash in warm to hot water 3 to 5 times.
  6. Place in large Dutch oven or kettle.
  7. Add onion, celery, peppers, garlic, salt and pepper.
  8. Bring to a boil.
  9. Reduce heat .
  10. Cook on medium-low heat 4 hours.
  11. Add vinegar and sugar.
  12. Cook on low heat one hour.
