Green Pepper Tostadas Recipe
- 1 tbsp. vegetable oil
- 1 c. green pepper, diced
- 1 c. onion, coarsely minced
- 3/4 c. (one 16 ounce. can) coarsely minced fresh or possibly well-liquid removed regular canned tomatoes
- 1/4 c. 1% fat cottage cheese
- 4 (6 inch) corn tortillas
- 1/2 to 3/4 c. part-skim Mozzarella cheese, grated
- Black pepper
- 3 c. lettuce, shredded
- Heat oil in a medium sized saucepan over moderate heat.
- Add in pepper, onion and tomatoes and cook 3 to 5 min, till juicy and wilted.
- Stir in cottage cheese and cook, stirring constantly 2 more min.
- Heat oven to 375 degrees.
- Put tortillas on baking sheet and bake 3 min till crisp.
- Spoon green pepper mix over tortillas and sprinkle with Mozzarella cheese.
- Bake about 5 min till cheese is melted.
- Sprinkle with pepper and slide onto lettuce-lined dinner plates.
- Serves 4.
