Vegetable Slaw with Horseradish and Mustard
- 3/4 cup finely julienned (2-inches long) green cabbage
- 3/4 cup finely julienned (2-inches long) carrots
- 1/2 cup finely julienned (1-inch long) red onions
- 2 tablespoons thinly sliced scallions
- 1 tablespoon freshly grated horseradish
- 1/2 clove garlic, finely minced
- 2 tablespoons creme fraiche
- 2 tablespoons champagne vinegar
- 1 teaspoon whole-grain mustard
- 1/4 teaspoon celery seeds, toasted
- Salt and freshly ground black pepper
- In a large bowl combine the cabbage, carrots, onions, scallions, horseradish and garlic.
- In a small bowl, whisk together the creme fraiche, vinegar, mustard and celery seeds.
- Toss the slaw with the dressing and season everything with salt and pepper.
- Marinade the slaw for 1 hour.
- Drain as desired, depending on the consistency you are looking for.
