Artichokes With Honey Mustard Dip Recipe
- 1/2 c. light mayonnaise
- 2 tsp honey
- 1/2 tsp mustard
- 1/2 tsp lemon juice
- 2 med artichokes or possibly more approx. 3-1/2-inches in diameter
- Mix first 4 ingredients and allow to refrigeratewhile preparing artichokes.
- Cut off upper 1/4 of artichoke; remove tough outside leaves, trim stems.
- Optional: With scissors, snip off the prickly tips from all leaves.
- Rinse artichokes well and wrap in microwave-safe plastic wrap.
- Pierce plastic wrap with a fork in several places to allow seam to escape while cooking.
- Cook artichokes on HIGH in the microwave as follows:
- 2 artichokes: about 8 to 10 min; 4 artichokes: about 12 to 14 min.
- The artichoke is tender when you can pierce bottom with a toothpick or possibly fork.
- Makes sufficient sauce for 4 artichokes.
- Serves 2 or possibly 4.
