Fruity Curried Beef
- 1 tablespoon oil (for frying)
- 2 large onions, chopped
- 1 large apple, peeled, cored and diced
- 500 g beef mince
- 1 crushed garlic clove
- 2 tablespoons flour
- 2 -3 teaspoons curry powder
- 1 cup beef stock
- 12 cup sultana
- 425 g pineapple in juice
- 12 lemon, juice of
- salt
- pepper
- Heat the oil and fry the onions until transparent.
- Add the apple, meat and garlic, and stir until meat is lightly browned.
- Stir in the flour and curry powder, cook over low heat for one minute.
- Gradually add the stock and bring to the boil.
- Add 1/4 cup of the pineapple juice.
- Simmer for 30 minutes,.
- Add sultanas, drained pineapple and lemon juice.
- Simmer another 30 minutes.
- Add salt and pepper.
- Serve with rice.
