Minestrone(Soup)
- 2 lb. beef tail bone
- 3 qt. water
- 1 bay leaf
- 1.75 lb. tomatoes, peeled
- 16 oz. tomato sauce
- 1 large onion
- 2 stalks celery, minced
- 3 cloves garlic, crushed
- 1 Tbsp. salt
- 1 tsp. black pepper
- 2 tsp. basil, crushed
- 2.5 c. carrots (1/4-inch slices)
- 2 c. celery (1/4-inch slices)
- 12 oz. elbow macaroni
- 1 lb. green beans
- 8 oz. chick peas
- 1/2 lb. potatoes, diced
- 12 oz. kidney beans, cooked
- You will need to use large pot.
- Simmer bone, bay leaf and celery in water.
- After 20 minutes, add tomatoes, sauce, onion, garlic, salt, pepper and basil.
- Simmer for 1.5 hours.
- Add celery slices, carrots and potatoes; continue to simmer for 30 minutes. Remove bone and add all remaining ingredients.
- Cook for approximately 20 minutes until macaroni is done.
- Serve with a sprinkle grated Parmesan cheese.
- Recipe makes 6 quarts.
