Chili Corn Sauce

  1. In a saucepan, over medium heat, add the oil.
  2. When the oil is hot, add the onions and saute for 1 minute.
  3. Add the corn, garlic and chili pepper.
  4. Season with salt and pepper.
  5. Saute for 2 minutes.
  6. Add the cream and bring the liquid to a simmer.
  7. Simmer, over medium heat for 6 to 8 minutes, or until the cream reduces by 1/4.
  8. Using a hand-held blender, puree the sauce until smooth.
  9. Season the sauce with salt and pepper.
  10. Serve the sauce with the burritos
