Gooseberry Meringue Pie

  1. Drain the gooseberries. Add the water to the syrup. Mix the 3/4 cup sugar, flour and salt. Add to the liquid.
  2. Add the egg yolks and melted butter or margarine. Cook until thick. Add the vanilla. Gently fold in gooseberries. Cover pan and cool. When cool, pour into a baked 9-inch pie shell or tart shells. Beat together the 2 egg whites, cream of tartar and 4 tablespoons of sugar until all sugar is dissolved.
  3. (When meringue weeps, you haven't dissolved the sugar.)
  4. Pile meringue lightly on pie (seal to crust to stop shrinking).
  5. Bake at 400u0b0 until delicately browned (about 8 minutes).
  6. Cool slowly out of draft.
