Potato Onion Fans

• 1 medium baking potato
• 1 small onion, sliced
• salt and pepper
• 1 tablespoon butter
• 1 tablespoon sour cream
• 1 teaspoon chopped chives

1. scrub potato, do not peel.
2. Cut into 1/4" slices.do not cut the potato all the way through -- should open like a fan.
3. Place a thin slice of onion between each potato slice.
4. Preheat oven to 400*.
5. Sprinkle the potatoe with salt and pepper and dot with butter.
6. .
7. Wrap loosely in foil.
8. Bake 1 hour or till done.
9. Open foil carefully and remove to serving place.
