Black Walnut Apple Bread
- 1 1/2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/8 tsp. allspice
- 1 1/2 c. crushed wheat cereal flakes
- 1 c. black walnut pieces
- 3/4 c. chopped apple
- 1 egg, slightly beaten
- 3/4 c. brown sugar
- 1 1/2 c. buttermilk
- 2 Tbsp. oil
- Sift flour with baking powder, soda, salt and spices.
- Stir in cereal flakes, walnuts and apple.
- Combine egg, brown sugar, buttermilk and oil.
- Add flour mixture.
- Mix just enough to moisten dry ingredients.
- Do not beat.
- Turn into well-greased 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 1 hour, or until tester inserted in center comes out clean.
- Let stand in pan 10 minutes. Remove to rack to cool completely.
- Yields 1 loaf.
