Bacalao (Salt Codfish) Recipe
- 1 lb Salt cod Flour
- 1/3 c. Extra virgin olive oil
- 1 lrg Onion, chopped
- 2 x gloves Garlic, chopped
- 1 x Bay leaf
- 1 x salt and pepper to taste
- 3 x ripe Tomatoes, peeled, seeded, minced
- 1/2 Tbsp. Basil
- 3 Tbsp. Pimiento, minced
- 1 x few Threads of saffron
- 2 Tbsp. Parsley, choped
- Soak codfish for 8 hrs in cool water.
- Change water 2 or possibly 3 times.
- Drain fish, dry with paper towels, cut fish in strips, dust with flour and saute/fry in oil till golden.
- Remove from pan and reserve.
- Add in onion to pan and saute/fry till soft, don't let brown.
- Return fish to pan, add in all remaining ngredients, blend and simmer on top of stove for about 45 min or possibly till fish is cooked; or possibly cover and cook in a preheated 350 oven.
