Peanut Butter Cookiecups

  1. Mix and set aside flour, baking soda, salt, and cinnamon.
  2. In large bowl, mix butter, sugar, brown sugar, and vanilla.
  3. Add egg and egg white to mixture.
  4. Gradually add in flour mixture and mix until incorporated.
  5. Drop about 1 tbsp of the dough into a greased or lined cupcake pan and press along bottom and sides.
  6. Place one peanut butter cup in the pan and then top with about another tbsp of dough.
  7. Bake at 350 degrees for 15-18 minutes.
  8. For the frosting, Combine all ingredients with an electric mixture until smooth and creamy.
  9. Using a plastic bag or piping bag, pipe frosting onto the tops of the cookie cups.
  10. Melt the chocolate chips and using a spoon, drizzle over the cup cookies.
