Vegan Pumpkin Pancakes

  1. Combine the dry ingredients in a large bowl.
  2. Process liquid ingredients in a blender until smooth.
  3. Pour the liquid ingredients into the dry ingredients and stir until just combined.
  4. Drop batter into a greased skillet over medium heat using a 1/4 cup measuring cup.
  5. Cook until small bubbles appear, about 2 minutes.
  6. Flip pancake and cook for another 2 minutes.
  7. Remove from pan, and repeat with remaining batter.
